Eggplant meatballs, (versione in italiano) in order to make these tasty vegetarian meatballs, you need the following ingredients:

2 medium-sized eggplants, 50 gr. grated cheese, 1 can of tuna, parsley, 2 eggs, salt, pepper and sunflower oil for frying.It is not difficult to make yourself comfortable and follow the procedure to make the aubergine balls: After having cut the two aubergines into small logs we put them in a pot and boil them for about 20 minutes, we put them in a colander and let them cool then we squeeze them well to remove all the water inside and put them in a container where we add the two eggs, the cheese, the drained tuna, salt just enough and the same for the pepper and finely chopped parsley; We mix everything until we have a soft and homogeneous mixture, now we are going to form balls of medium size and slightly squashed on two sides (they fry better), we gently lay them on a plate and to make sure that they do not disintegrate when we fry them, we put them in the fridge for about 30 minutes, now we put the oil in a pan that must be abundant and very hot, in the meantime we pass the eggplant and tuna meatballs in the flour and then in the boiling oil, let’s brown on one side and then turn them gently so that they are crispy on the outside and soft inside, when they are ready we take them and place them on a plate with absorbent kitchen paper on top … ready to enjoy. for the realization, follow us on our youtube channel Penkoleo of which we are partners.
